This year at the Corvallis Indoor Winter Market there was hot coffee available for a donation, with proceeds benefiting the Benton County Food Bank. Thank you Village Bean of Yachats, Big Mountain Coffee Roasters and Portland Roasters for the donation of delicious organic coffee beans. Thanks to the vendors and shoppers of the Market for their generous donations for the fresh brewed coffee. The 2011 Corvallis Indoor Winter Market was able to make donations to the Food Bank totaling $330.

If your non-profit organization would be interested in operating the coffee service as a funding source for the 2012 season, please contact Katie at 541-563-3044.

Head to our farmers' market

Come to the Corvallis Indoor Winter Market this Saturday! Here, you'll meet the people who actually grow the plants that end up on your table. You can ask them questions, handle the vegetables, squeeze the fruit...without the whole experience squeezing you. You see, the produce at a farmers' market is actually fresher, and often cheaper, than buying the same fruits and veggies at a supermarket. That's because transportation costs are lower. All of the produce is locally grown. Plus it will last longer once you get home. Don't let making an extra trip or driving a little farther put you off. Once you see how much you'll save and the freshness of the produce, you'll keep coming back. Plus, the entire experience of visiting a farmers' market on a Saturday morning is something you can share with the entire family!

Dennison Farms- We found a new recipe that is perfect for a special Valentine's dinner--fennel & beet soup, with heart-shaped garnish! We will have free copies of the recipe, plus fennel, beets, and of course plenty of our fabulously sweet carrots at the market this Saturday.

Honeystone Candles- Clear, sunny afternoons are promising spring, but we have a few weeks to go before our bees can bring in much new nectar and pollen. The pussy willows are silvering, and will be attractive food for bees when it's warm enough to fly. At the moment, the hazels are finishing their bloom, the heathers are still flowering, and alder catkins are producing pollen. Our hives are heavy with food from last summer and fall, so the bees are (so far) in good shape.
To celebrate Valentine's Day, we are offering $1 off our Floating Hearts candle set - just $6.50 for three pure beeswax floating hearts to spread sweetness and light in your home. Each candle burns about 2 hours.

Specialty Made- We will have a lovely assortment of handmade Valentines Day cards this week. A handmade card is a special way to tell someone you love them.

Pacific Sourdough

This week the reality of pecans hit the bakery. We make a variety of wonderful pecan treats beloved by our loyal customers but when my wholesaler quoted me the $9.00 a pound price of pecans (a 50% increase since December) I had to rethink the idea of pecan sticky buns for the farmers market this weekend. Hm...cinnamon buns, no everyone makes those, almond buns, did those last week. Then I remembered a favorite from my childhood. My mother used to make a delicious Orange Sticky bun. Now what was the recipe? I remember it had orange juice, or was that oj concentrate? Were they frosted or turned over with the sticky side up? Surely a Google search would turn up just the right recipe. Nope, nada. I wondered if my mom would remember or maybe even have the recipe somewhere?

My mom is a very organized person, " a place for everything and everything in it's place". I am sure this adage was much easier to employ after I moved out some 30-odd years ago and stopped messing things up. Her pantry is a fine example of this neatness. 25 kinds of teas, organized in sub-sets of herbal, green, black, flavored, decaf, caffeinated and specialty, each sub-set arranged alphabetically. I tease her about it mercilessly. But hey, when you need something from Mom she can usually put her finger right on it. So I picked up the phone, "hey Mom, you remember those orange buns you used to make? I think in reality she only made them a handful of times before some other goody snagged our attention and appetites. Sure enough, she remembered them and in less than 3 minutes found the cookbook with the recipe. Bingo! Orange Glory Buns from a circa 1963 Better Homes and Gardens. It sounded like just the treat to bake to brighten up a winter morning, a few tweaks, a splash of Grand Marnier in the glaze and there we are, Orange Sunshine Buns, everybody loved 'em. Thanks Mom, let's have tea.

Early morning at Pacific Sourdough

It's 3:55 Saturday morning, dark and cold outside and pretty chilly inside the bakery too. I, with my first cup of coffee still steaming, come in and sleepily turn on the lights and the ovens. The sourdough loaves have been slowly proofing all night in the cool air and as the ovens heat up, the room warms and the loaves finish rising and are ready to be baked by the time the thermostat reaches 450degrees. The first batch gets tipped out of their baskets, slashed with a sharp razor and loaded into a steamy hot oven, 42 loaves to a batch. They quickly "spring" into perfect boules and baguettes; their slashes opening elegantly and in a few minutes begin to turn golden. 30 minutes later, I finish my coffee and it's time for the bread to come out. The loaves are now a dark golden brown and smell like toasted wheat, little blisters on the surface indicate perfect fermentation and I know the bread will taste great. As they cool on the rack they make a little crackling noise as the crust contracts slightly, it is a little chorus that says "breakfast"! Now the best part of the morning, the reward for yesterday's mixing and shaping and patience, a baker's privilege and of course, quality control. I get a fresh cup of coffee and tear off a chunk of warm baguette, the crust at it's crispiest, the crumb steaming and pungent, I butter it and take a bite, perfect! By now the bakery is warm and cozy and smells heavenly, the sun is rising as I load another batch into the oven and I am happy to know I will soon be sharing my delicious breakfast with lots of farmers market customers, smiles all around.
